Growing winter squash such as Butternut squash requires lots of space, lots of sun, and most of all, patience. Put out starts as soon as all danger of frost is past, and plant in tall hills so the soil can warm up fast. Vines grow a minimum of eight feet, and are challenging to grow vertically due to the weight of the developing fruit and the tenderness of the vines. Butternut squash takes all summer to fully mature, meaning that the rind is so hard, it can't be pierced with a fingernail. The vines will dry and wither, at which point, the vine should be cut an inch or two above the fruit. Resist the urge to transport mature squash by the stems; if they tear out, you'll need to eat the squash immediately. Otherwise, intact squash may be stored for two to six months.
