Cilantro 'Santo'

One of the main complaints about growing cilantro (aka Chinese Parsley) is that it bolts so quickly when the weather turns hot. Planting cilantro as soon after the last spring freeze as possible and placing it where it will get some protection from late afternoon sun may extend the life of the plant. 'Santo' is also a slower-bolting variety with improved "leafiness." Pro tip: applying a fertilizer that is higher in nitrogen than potassium or phosphorus every two weeks during the growing season will encourage the leafy growth.  
Inevitably, cilantro will flower, at which point the leaves are less pleasant tasting. Let the flowers turn to seeds and when they begin to turn brown, cut the stem off and place in a paper bag. Seeds can be used ground or whole in cooking, or save them to plant next year's cilantro crop.
