By now, most consumers have heard that those packages of baby carrots you buy in the store are not really baby carrots at all, but large carrots that have been whittled down to size. 'Little Finger' carrots are truly baby-sized carrots, only three inches long at their peak. This naturally means that you won't have to wait as long to harvest these roots, as most other carrots are at least twice as long at their peak.
Although carrots like the sun, they prefer cooler temps, and can be planted up to a month before our average last freeze date, as long as the soil registers at least 45 degrees. Consider planting these starts in an 8" to 10" deep pot, carefully dividing each cell into two or three separate clumps and spacing them two inches apart. You'll need to thin each clump to the single strongest seedling, then sit back and be patient. Delicious raw and fresh from the garden, these are also the perfect size for pickling or canning.
