Bull's Blood' Beets are one of those "two-fer" crops, where gardeners can enjoy both the tender red leaves and the roots. This French heirloom beet has incredibly red foliage that is delicious and nutritious. Some fans suggest growing a row of this variety for the leaves and another row for the roots, although up to 1/3 of the leaves may be harvested at a time with no harm to the root growth. A cool weather crop, 'Bull's Blood' beets can be planted in the early spring before last freeze as well as in the late summer for a fall harvest. For best root production, plant seedlings four inches apart. If thinning is necessary, those discarded seedlings may be eaten fresh.

Culinary Uses: Leaves are edible as well as the roots. Baby greens are great in salads, mature leaves are excellent cooked. Roots may be eaten raw or cooked.
Harvest Time: 50 - 60 days. Up to 1/3 of greens may be plucked for immediate use without harming root crop
Mature Size: Leaves can grow to 16" but baby leaves are more tender. Roots can be harvested when 1" - 3" in diameter.
