Edamame has become a familiar snack item in American restaurants, and bags of frozen edamame can be found in most grocery stores. Soybeans are actually an easy summer crop, similar to growing other legumes, and usually mature in about 10 weeks. Hairy pods should be harvested when the pods are 2 - 3 inches long and the seeds are quite plump. Yellowed pods are past their prime for eating fresh and can be left to dry, to be planted next year.
