Though not quite hardy enough to dependably survive our Pacific NW winters, lemon verbena grows quickly from spring right up until freeze, forming a small shrub, usually two feet tall and wide. In warmer climates, it can eventually grow to six feet tall and wide, so don't be surprised if lemon verbena becomes an overachiever in the herb garden. Deer and rabbits tend to leave this herb alone, though bees may be drawn to the late summer flowers. As is true of most herbs, lemon verbena needs well-draining soil and full sun for best results.
The lemon-flavored leaves may be picked throughout the season; harvest the entire plant before first fall frost. The narrow, lance-shaped leaves are sometimes used in cooking in lieu of lemons or lemon zest, and the dried leaves make a citrusy tea.
